- Preheat the oven to 350°F (175°C). Butter a 9-by-13-inch baking pan, then line it with parchment paper, leaving an overhang for lifting out the brownies.
- Whisk the flour, salt, and cocoa powder together in a medium bowl.
- Place the dark chocolate, butter, and espresso powder in a heatproof bowl set over a saucepan of gently simmering water. Stir occasionally until completely melted and smooth.
- Turn off the heat but leave the bowl over the warm water. Add both sugars and whisk until combined. Remove the bowl and let the mixture cool to room temperature.
- Whisk in 3 eggs until combined, then add the remaining 2 eggs and whisk just until incorporated. Stir in the vanilla without overmixing.
- Sprinkle the flour mixture over the chocolate mixture. Fold gently with a rubber spatula until only a few streaks of flour remain.
- Spread the batter evenly in the prepared pan. Bake for about 30 minutes, rotating the pan halfway through, until a toothpick inserted in the center comes out with a few moist crumbs.
- Cool completely in the pan. Lift out using the parchment, cut into 16 squares, and serve.
How to Keep Brownies Fudgy
Fold the flour in gently and remove the brownies when a toothpick has a few moist crumbs. Baking until completely dry will make them more cake-like.
