- Pat the chicken thighs very dry with paper towels, especially the skin. This helps the skin become crisp.
- Rub the chicken with olive oil, then season evenly with the chicken or Italian seasoning, salt, and black pepper.
- Arrange the thighs skin-side up on the rack, leaving space between each piece.
- Bake for 35 to 40 minutes, until the skin is crisp and the thickest part reaches at least 165°F (74°C).
- For extra-crisp skin, broil for 2 to 3 minutes while watching closely. Rest for 5 minutes before serving.
