- Prepare the oven. Preheat it to 425 degrees.
- Place all the ingredients (chicken thighs, drumsticks, carrots, potatoes, packets of onion soup mix, olive oil, and garlic powder) in a large bowl or Ziploc bag. Mix well until the chicken, potatoes, and carrots are coated in the seasonings. Then, into a 9 x 13-inch pan, pour everything and spread in an even layer.
- Place the pan in the preheated oven and roast the chicken, potatoes, and carrots for about 45 minutes or until the carrots are completely cooked and the chicken juices run clear. I suggest basting for a few times while cooking for flavour.
- Remove from the oven when done and serve immediately. Enjoy!
