Old Fashioned Coconut Cream Pie

Have you ever tried something so delicious you can barely stand it…and something that you’re even more shocked that you actually made. This is one of those recipes. When you make this Old Fashioned Coconut Cream Pie recipes you’ll feel like you’ve died and gone to heaven.

INGREDIENTS:

1 pre-baked pie crust.

1 cup shredded sweetened coconut.

1 1/2 cups half and half.

1 cup white sugar.

1/2 cup cornstarch.

5 egg yolks.

100 g cream cheese.

1 tsp pure vanilla extract.

1 tsp coconut extract.

1 can coconut milk.

A pinch of salt.


Directions:

STEP 1:

I combined milk, 1 cup half and half, sugar and salt, in a medium saucepan. I put the mixture over medium heat, stirring occasionally. In a medium bowl, I beat egg yolks with warm milk, whisking constantly.
I use another small mixing bowl, I whisked together 1/2 cup half and half and cornstarch until well blended.

STEP 2:

I mixed egg yolks mixture with cornstarch mixture into a saucepan. I cooked for 3 minutes.
I add cream cheese, coconut extract, and vanilla extract.

STEP 3:

I poured the batter into the baked pie crust, and I put it in the refrigerator to chill for 2 hours.

FOR TOPPING I USED:

1 cup frozen whipped topping, thawed and shredded sweetened coconut.

SERVE IT AND ENJOY.
