  • pound head-on jumbo shrimp
  • tablespoon extra-virgin olive oil
  • divided
  • medium shallots minced (about
  • /3 cup)
  • /2 teaspoon seeded minced
  • serrano chile about 1 medium
  • teaspoons dried oregano
  • ounces baby Yukon Gold
  • potatoes, quartered about 2 cups
  • garlic clove thinly sliced (about 1
  • teaspoon)

Method
 

  1. Step 1
  2. Using a knife, make a 1/4-inch-deep cut along
  3. the back of each shrimp shell from head to
  4. tail. Leave shell and head intact. Using a small
  5. moistened paper towel and a paring knife,
  6. remove and discard the vein. Pat shrimp dry,
  7. and set aside.

  9. Heat 1/4 cup oil in a very large skillet over
  10. medium-high until shimmering and very hot.
  11. Add shrimp, and sear until shells are scorched,
  12. about 1 minute. Transfer shrimp to a plate.

  15. and oregano, and sauté until shallots are
