Ingredients
  

  • 1 1/2 pounds boneless skinless chicken breasts diced
  • 2 large eggs
  • 1/3 cup mayonnaise
  • 1/3 cup all-purpose flour cornstarch, or potato starch
  • 4 ounces mozzarella cheese shredded
  • 1 1/2 tablespoons fresh dill chopped
  • 1/2 teaspoon salt or to taste
  • 1/8 teaspoon black pepper
  • 2 tablespoons light olive oil plus more as needed
  • 1/3 cup mayonnaise for optional aioli
  • 1 garlic clove pressed, for optional aioli
  • 1/2 tablespoon lemon juice for optional aioli
  • 1/4 teaspoon salt for optional aioli
  • 1/8 teaspoon black pepper for optional aioli

Method
 

  1. Dice the chicken into roughly 1/3-inch pieces and place it in a large mixing bowl. Partially freezing the chicken first makes it easier to cut.
  2. Add the eggs, mayonnaise, flour, mozzarella, dill, salt, and black pepper. Stir until evenly combined. Cover and refrigerate for 2 hours or overnight.
  3. Heat the olive oil in a large nonstick skillet over medium heat. Drop heaping tablespoons of the chicken mixture into the skillet and gently flatten the tops.
  4. Cook uncovered for 3–4 minutes on the first side. Flip and cook for about 3 minutes more, until golden and the chicken is cooked through. Repeat with the remaining mixture, adding oil as needed.
  5. For the optional garlic aioli, stir together the mayonnaise, pressed garlic, lemon juice, salt, and black pepper until smooth. Serve alongside the fritters.
  6. To check doneness, cut a fritter in half; the chicken should be completely white inside and reach 165°F (74°C). Reduce the heat if the outside browns too quickly.
