Cheesy Chicken Fritters
These cheesy chicken fritters are crisp and golden outside, tender inside, and packed with mozzarella and fresh dill. Serve them as an appetizer or an easy family meal with garlic aioli.

Method
- Dice the chicken into roughly 1/3-inch pieces and place it in a large mixing bowl. Partially freezing the chicken first makes it easier to cut.
- Add the eggs, mayonnaise, flour, mozzarella, dill, salt, and black pepper. Stir until evenly combined. Cover and refrigerate for 2 hours or overnight.
- Heat the olive oil in a large nonstick skillet over medium heat. Drop heaping tablespoons of the chicken mixture into the skillet and gently flatten the tops.
- Cook uncovered for 3–4 minutes on the first side. Flip and cook for about 3 minutes more, until golden and the chicken is cooked through. Repeat with the remaining mixture, adding oil as needed.
- For the optional garlic aioli, stir together the mayonnaise, pressed garlic, lemon juice, salt, and black pepper until smooth. Serve alongside the fritters.
- To check doneness, cut a fritter in half; the chicken should be completely white inside and reach 165°F (74°C). Reduce the heat if the outside browns too quickly.
Tips for Perfect Chicken Fritters
Dice the chicken evenly so every fritter cooks at the same rate. Keep the skillet over medium heat and verify that the center reaches 165°F (74°C) before serving.
