Grandma’s Old Fashioned Custard Pie

It’s grandmothers day soon! You might not know it, but this party was invented in 1987 by a coffee brand (I’ll let you guess which one).
* Ingredients : 
+For 8 people
° 4 golden apples
° 20 g semi-salted butter
° 50 g of caster sugar
° 10 cl of milk
° 1 vanilla pod
° 1 roll of puff pastry
° 25 g of brown sugar
° 3 eggs
° 20 cl of 30% liquid cream
° 100g of flour
° 75 g icing sugar
° 75 g semi-salted butter

* Preparation : 
Preheaat oven 190 ° C.
Place the dough in a pie pan, prick it and cover it with the cooking beans. Precook it white for 10 to 15 minutes in the oven.
Split the vanilla bean in half, scoop out the seeds inside with the tip of a knife.
Peel the apples, hollow them out, cut them into large dice.
Melt 20 g of butter in a pan, sauté the diced apples for 2 to 3 minutes over high heat. Sprinkle with brown sugar and lightly caramelize.
Beat the eggs into an omelet in a bowl. Pour in the caster sugar, mix and incorporate the cream, milk and vanilla.
Distribute the caramelized apple pieces over the precooked pastry base. Pour over the contents of the salad bowl. Bake and cook for 25 to 30 minutes at 170 ° C.
Place the flour and caster sugar in a bowl, mix and incorporate the very cold butter cut into pieces. Work so as to obtain a “sand”.
Spread the crumble dough on the surface of the tart and continue baking at 200 ° C () for 15 to 20 minutes.
Let cool then cut into equal parts to serve.
