Diner-Style French Toast
Diner-style French toast uses thick Texas toast and a cinnamon-vanilla batter for soft centers and golden, buttery edges. Serve it immediately with powdered sugar and warm maple syrup.

Method
- Whisk the eggs, milk, flour, sugar, vanilla, salt, and cinnamon together until the batter is mostly smooth.
- Heat a large skillet or griddle over medium heat. Add 1 tablespoon butter. If the butter begins to smoke, reduce the heat.
- Dip each slice of Texas toast in the batter for about 30 seconds per side. Let the excess batter drip back into the bowl.
- Place the coated bread on the hot skillet and cook for 1 1/2ā2 minutes per side, until golden brown and cooked through.
- Add more butter to the skillet as needed and repeat with the remaining bread.
- Dust with powdered sugar and serve hot with butter and warm maple syrup.

Keep the griddle over medium heat so the bread cooks through before the exterior becomes too dark.
