Cucumbers onions and Tomatos Salad is easy to make. It’s super light and refreshing and totally delicious. To start you’ll need 2 English cucumbers. I’ve sliced off the ends and cut it in half, and then I’m going to slice it in half lengthwise, and then again to quarter it.
You want them in little bite-sized pieces. Then we’re going to transfer these all to a large mixing bowl. Then we’ll cut up a pint of little cherry tomatoes, and since these are super small I’m only going to cut them in half. If they were bigger I’d quarter them. Then we’ll slide all of those in with our cucumber in our large bowl, Last we’ll dice up a red onion.
You want to use red onion for this because they are the best for eating raw. We’ll just give these a quick dice. We’ll place all of those into the mixing bowl with the cucumber and tomato as well. Last we need to make our dressing,
You’ll need 2Tbsps of extra virgin olive oil, 2Tbsps of freshly squeezed lemon juice, 1Tbsp of apple cider vinegar, 1Tsp of sugar, 1/2Tsp of salt, 1/4Tsp of black pepper, and 2Tbsps of freshly chopped dill. Whisk this together. Then we’ll just pour our dressing right over the salad. Just drizzle that on and then toss it together. Give it a taste and add up to a 1/2 teaspoon more salt to suit your own personal taste preferences.
Cover this with plastic wrap, pop it in the fridge for an hour, and let it chill, and then you are ready to eat.
INGREDIENTS:

- 1 red onion, diced
- 2 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- 1 tablespoon apple cider vinegar
- 1 teaspoon granulated sugar or honey
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh dill, minced
INSTRUCTIONS:
1 ) In a large bowl, toss together cucumber, tomatoes, and onion.
2 ) In a small bowl, whisk together olive oil, lemon juice, vinegar, sugar, salt, pepper, and dill.
3 ) Pour over cucumbers and toss to combine.
4 ) Cover and refrigerate at least 1 hour before serving. enjoy!
