½ Cup Butter or margarine, softened
¼ Cup Brown sugar, packed
1 Egg
½ Tsp. vanilla
1 cup Flour
2/3 cup Jam – any flavor (I used Strawberry)
¼ Tsp. Salt
Preheat oven to 300. Grease cookie sheet(s).
Cream butter or margarine, sugar and salt, add egg and vanilla. Slowly add flour mixing well. If dough too soft cover and put in fridge for an hour. Shape dough into balls (little smaller then ping pong ball) place on cookie sheet leaving a little room between each ball (for flattening LATER). Bake for 6 minutes in 300 oven – remove and use something (I use back of a tsp. measuring spoon) to press down leaving a thumbprint in center of cookie – be careful NOT to go all the way through. Place jam in thumbprint being careful not to drop any on cookie sheet. Place back in oven and continue baking until a nice light golden brown – about 10-12 minutes but watch. Remove to wire rack when done for cooling. ENJOY!!
