A delightful way to eat broccoli!
2 tsp vegetable oil
2 cloves garlic – minced
½ onion – chopped
1 (12 oz) bag frozen broccoli (I personally use fresh broccoli)
¾ c panko a variety of flaky bread crumb used in Japanese cuisine as a crunchy coating for fried foods (I use pork rinds instead of panko, to lower the carb count)
½ c sharp cheddar cheese
1/3 c parmesan cheese
2 eggs
Salt/pepper

Preheat oven to 400. Sauté the garlic and onions seasoning to taste. Dry the broccoli as much as possible. Add panko, onion/garlic mixture, cheeses eggs and salt/pepper. Mix well. Form into patties. Place on pan. Bake 15 min until light browned and crispy. You can also make this with 1/2 broccoli and 1/2 cauliflower!
