- Preheat the oven to 375°F (190°C). Lightly grease a large baking dish or rimmed sheet pan.
- Combine all the Cajun seasoning ingredients in a small bowl. Reserve any seasoning not used in this recipe in an airtight container.
- Add the potatoes, corn, half of the garlic, 1 teaspoon olive oil, and 1/2 teaspoon Cajun seasoning to the pan. Toss until evenly coated and scatter the butter over the top.
- Bake the vegetables for 25 minutes.
- Meanwhile, combine the sliced andouille, shrimp, remaining garlic, remaining olive oil, and 1/2 tablespoon Cajun seasoning in a bowl. Toss well to coat.
- Add the sausage and shrimp to the pan with the potatoes and corn. Bake for another 12 to 15 minutes, until the shrimp are opaque and the potatoes are tender.
- Sprinkle with fresh parsley and serve immediately with lemon wedges.
Cooking the Shrimp Correctly
Add the shrimp only during the final stage of baking. They are ready when opaque and curled; overcooking can make them rubbery.
