- Salad:
- 4 large cucumbers peeled and thinly sliced
- 2 cups seeded and chopped garden tomatoes
- 1/2 cup finely chopped onion
- 1/2 cup sliced green olives
- 1 cup cherry tomatoes halved
- Fresh basil for garnish, optional
- Creamy Italian Dressing:
- 1 cup mayonnaise
- 1/2 cup grated Parmesan cheese
- 1/2 cup prepared balsamic vinaigrette
- 2 teaspoons onion powder
- 1 teaspoon garlic powder
- 2 tablespoons dried Italian seasoning or dried thyme
- 1/2 teaspoon red pepper flakes
Instructions
- Place the sliced cucumbers, chopped garden tomatoes, onion, and green olives in a large mixing bowl. Toss gently to combine.
- Whisk the mayonnaise, Parmesan, balsamic vinaigrette, onion powder, garlic powder, Italian seasoning, and red pepper flakes in a separate bowl until smooth.
