Ingredients

  • Salad:
  • 4 large cucumbers peeled and thinly sliced
  • 2 cups seeded and chopped garden tomatoes
  • 1/2 cup finely chopped onion
  • 1/2 cup sliced green olives
  • 1 cup cherry tomatoes halved
  • Fresh basil for garnish, optional
  • Creamy Italian Dressing:
  • 1 cup mayonnaise
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup prepared balsamic vinaigrette
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 2 tablespoons dried Italian seasoning or dried thyme
  • 1/2 teaspoon red pepper flakes

Instructions

  • Place the sliced cucumbers, chopped garden tomatoes, onion, and green olives in a large mixing bowl. Toss gently to combine.
  • Whisk the mayonnaise, Parmesan, balsamic vinaigrette, onion powder, garlic powder, Italian seasoning, and red pepper flakes in a separate bowl until smooth.
  • Pour the dressing over the vegetables and fold gently until everything is evenly coated.
  • Transfer to a serving bowl and top with the halved cherry tomatoes. Garnish with fresh basil if desired.
  • Cover and refrigerate for about 30 minutes before serving. Stir gently once more and serve chilled.

How to Prevent a Watery Salad

Use firm tomatoes, remove their seeds, and serve the salad soon after chilling. Cucumbers naturally release liquid as they sit.
