Ingredients

  • Meatloaf:
  • 3/4 pound ground beef
  • 2/3 pound ground veal
  • 3/4 cup quick-cooking rolled oats
  • 1/2 cup ketchup
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon yellow mustard
  • 2 large eggs beaten
  • 1 medium onion finely chopped
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste
  • Glaze:
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon or yellow mustard

Instructions

  • Preheat the oven to 350°F (180°C). Line a 9-by-5-inch loaf pan with parchment paper, leaving an overhang on the long sides.
  • Place the ground beef and veal in a large bowl and gently combine them with your fingers.
  • Add the oats, ketchup, chicken broth, parsley, mustard, eggs, onion, salt, and pepper. Mix gently just until combined; do not compact the mixture.
  • Transfer the mixture to the prepared loaf pan and level the top.
  • Stir the ketchup, brown sugar, and mustard together in a small bowl. Spread the glaze evenly over the meatloaf.
  • Bake for 50 to 60 minutes, until the center reaches 160°F (71°C).
  • Remove from the oven, tent loosely with foil, and rest for 10 to 15 minutes. Lift out using the parchment and slice to serve.

How to Keep Meatloaf Tender

Mix the ingredients only until combined and avoid pressing the mixture tightly into the pan. Resting after baking also helps retain the juices.
