Ingredients

  • 1 1/2 pounds lean ground beef
  • Salt and black pepper to taste
  • 3 teaspoons olive oil
  • 1 cup chopped green bell pepper
  • 1 cup chopped red bell pepper
  • 1 cup chopped onion
  • 1 10-ounce can diced tomatoes with green chiles, mild or hot
  • 4 pita breads warmed
  • 1/2 cup sour cream
  • 1/4 cup blue cheese crumbles optional

Instructions

  • Warm the pita breads briefly in the microwave or a dry skillet and keep them covered.
  • Heat a large skillet over medium-high heat. Add the ground beef and crumble it as it cooks.
  • Add the olive oil, green pepper, red pepper, and onion. Cook until the beef is no longer pink and the vegetables are tender.
  • Drain excess grease if necessary. Stir in the diced tomatoes with green chiles and cook until heated through.
  • Season with salt and black pepper to taste.
  • Place each warm pita on a sheet of aluminum foil or parchment. Spoon one-quarter of the beef mixture onto each pita.
  • Top with sour cream and blue cheese crumbles if desired. Fold or roll the pita with the foil for support and serve warm.

Serving Tip

Keep the warmed pitas wrapped in a clean towel so they remain flexible while you prepare the filling.
