Easy Mexican Street Corn
Grilled corn on the cob topped with creamy lime sauce, Cotija cheese, cilantro, and smoky chipotle chili powder.

Ingredients
- 4 ears corn
- 1/4 cup Mexican crema or sour cream
- 1/4 cup mayonnaise
- 1/2 cup crumbled Cotija cheese
- 2 cloves garlic minced
- 1/4 teaspoon fine sea salt
- Zest and juice of 1 lime
- 1/4 cup finely chopped cilantro
- 1/2 teaspoon chipotle chili powder
Instructions
- Heat a grill to about 400°F. Grill corn for about 12 minutes, turning a quarter turn every 3 minutes.
- Stir crema, mayonnaise, Cotija, garlic, lime zest and juice, and cilantro until smooth.
- Generously coat hot corn with the cheese mixture. Sprinkle with chipotle chili powder, extra Cotija, and cilantro.
- For oven roasting, wrap lightly oiled husked corn in foil and roast at 425°F for 20 to 25 minutes.
Grill or Roast
Grill the corn for charred flavor, or roast it in foil when cooking indoors. Add the creamy topping while the corn is hot.
