Loaded Potato and Chicken Casserole – Oven Recipe!

Ingredients: 

4 boneless skinless chicken breast, cubed
5 potatoes, cut into 1/2 in cubes
1/3 cup olive oil…
1 & 1/2 teaspoon of salt
1 teaspoon of pepper
1 tablespoon of paprika
2 tablespoons of garlic powder
Topping:
2 cups of fiesta blend cheese
1 cup of crumbled bacon
1 cup of diced green onions.

Instructions:

Preheat oven to 400
In a large bowl, mix oil, salt, pepper, garlic powder and paprika. 
Add the potatoes and chicken and stir to coat.
Add to a greased pan and back for 55-60 minutes. stirring about every 20 minuets.
You want the potatoes and chicken to be cooked through, crispy and brown.
While the chicken/potatoes are cooking, fry up the bacon and crumble
Once the chicken and potatoes are fully cooked, remove from oven and add cheese bacon and green onions. 
Bake for an additional 5 minutes
